LOCAL STYLE OF PRODUCING GIN

 Local Gin called Ogogoro, Agbakara or ethanol which is more formal is produce from palm wine.

Palm wine is pale coloured liquid gotten fro Rifia or palm tree.

Other agricultural extract such as cassava, wheat, maize,apple, potato,  sugar cane and many  more of carbohydrate stuff can also be used. those involve in production of tapioka would understand what i am talking about.

palm wine, cassava or any sugar rich extract  are pale colour which for as long as it is not fermented, maintain absolute zero concentration of ethanol (alcohol).

Those who are specialized in collection of the raw liquid are reffered to as palm wine Taper and are believed   to have been living in the swamp.

Production of gin from Rafia, palm tree or cassava does not require much capital but much skill is needed to drive it functioning.

After the collection of the raw liquid from it respective source, it is then exposed to the air for one to two or more days allowing complete fermentation process to take place and it is then passed into distillation system where it is heated to drive out the ethanol concentrate.

Please note: fermented (salwer in nigeria pedging english  ) food contain significant concentration of alcohol. so if  you have been advised by the doctor to stop taking alcohol due to health issue, you should also stop the consumption of fermented food.



Now, distillation is a closed system with an extension of a tin pine connected  at the top of it to a cold water chamber. it is technically connected in a way that the pipe passes through cold water chamber to another point called the collection point

When the liquid is poured into the system and is set on heat, it will start to boil when the temperature has risen giving out vapour of ethanol which force it way out through the tin pipe to the cold water chamber where the vapour energy is reduced and been converted back to a liquid which is colourless with a strong smell and this  liquid is the pure alcohol.
